White Bean Kale Soup

This hearty White Bean and Kale Soup is the perfect way to enjoy fresh, seasonal ingredients in the winter months. Ingredients:

  • 2 cans Great Northern Beans, drained and rinsed
  • 1 medium regular onion, chopped
  • 2-3 cloves garlic, minced
  • 1 bunch curly kale, chopped (large stems removed)
  • 6 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp butter
  • 3 tbsp all-purpose flour

⁠Directions:

  1. In a large, heavy-bottomed pot, melt the butter over medium heat.
  2. Add the chopped onion and garlic and sauté until softened and translucent, about 4-5 minutes.
  3. Sprinkle in the flour and stir well to form a roux. Let it cook for 1-2 minutes to remove the raw flour taste.
  4. Gradually whisk in half of the broth, followed by the beans. Stir to combine and bring to a simmer. Cook for 10 minutes, allowing the beans to soften and blend with the broth.
  5. Add the remaining broth and bring the soup back to a boil. Once boiling, stir in the chopped kale.
  6. Reduce the heat and simmer for an additional 15-20 minutes, or until the kale is tender and the flavors are well combined.
  7. Season with salt and pepper to taste.
  8. Serve warm and enjoy this comforting, nutrient-packed soup!
