Spring Lettuce Wraps with Ponzu Sauce

Ingredients:

For the Sauce:

  • ½ c. Soy Sauce
  • 2 tbsp Rice wine vinegar
  • 1 Lime, juiced and zested
  • 1 Orange, juiced and zested
  • 1 Lemon, juiced
  • 1 tsp Roasted garlic
  • 1 c. Dashi (Japanese soup stock)

 

For the Lettuce Wraps:

  • 1 Bibb Lettuce head
  • 1 hand full chopped spinach
  • 2 Green onions, sliced
  • 10 Chives, chopped
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Black pepper

 

⁠Directions:

  1. To make the Ponzu Sauce, use a small pot and bring the Dashi to a simmer over medium heat. Add roasted garlic and soy sauce. Reduce heat to low and simmer for 10-15 min.
  2. Remove from heat and add the juice from the lime and orange. Add lemon juice as necessary to balance acidity.
  3. While the sauce is cooling, use a skillet over medium heat and add the olive oil and green onions. Cook for about 5 minutes, then add the chives and spinach. Cook for 1-2 min and remove from heat and season with salt and pepper.
  4. Add the zest from the lime and orange to the ponzu sauce once cooled.
  5. Lay out the leaves of the Bibb lettuce and fill each leaf with a spoonful of the spinach mixture and top with the ponzu sauce.
