Smothered Pork Chops & Shiitake Mushrooms Meal Kit

Serves 4-6

Ingredients:

– 1 bunch Thyme (Flores Farm)

– 16 oz Carolina Gold Rice (Marsh Hen Mill)

– 8 oz Sour Cream (Mountain View Farm)

– 8 oz Shiitake Mushrooms (Schofield Farms)

– 4 Boneless Pork Chops (Firsthand Foods)

– Salt and pepper to taste

– Olive oil for cooking

 

Instructions:

 

  1. Prepare the Rice:

   – Rinse 16 oz of Carolina Gold Rice under cold water until the water runs clear.

   – In a pot, add 2 cups of water and the rinsed rice.

   – Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the water is absorbed. Set aside.

 

  1. Prepare the Pork Chops:

   – Season both sides of the boneless pork chops with salt, pepper, and fresh thyme leaves.

   – Heat a skillet over medium-high heat and add a tablespoon of olive oil.

   – Add the seasoned pork chops to the skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

 

  1. Cook the Shiitake Mushrooms:

   – Clean the shiitake mushrooms and slice them.

   – In the same skillet used for the pork chops, add another tablespoon of olive oil if needed.

   – Add the sliced shiitake mushrooms to the skillet and cook for about 5-7 minutes until they are tender and golden brown.

 

  1. Assemble the Meal:

   – Serve the cooked pork chops over a bed of Carolina Gold Rice.

   – Spoon the cooked shiitake mushrooms over the pork chops.

   – Garnish with a dollop of sour cream on top of each pork chop.

   – Sprinkle with additional fresh thyme leaves for garnish if desired.

 

  1. Serve:

   – Serve the smothered pork chops and shiitake mushrooms hot, and enjoy your delicious meal!
