Kale Dinner Salad Bundle Recipe

Ingredients:

  • 2 bunches of Kale, de-stemmed
  • 1 bunch of Red Radish, sliced thin
  • 1 bunch of Spring Onions, greens and whites separated
  • 1 Spring Garlic, cut green stalk about 2-3 inches above the garlic bulb and remove the outer most layer, sliced thin
  • 2 Pink Lady Apples, cored and cut into half inch pieces
  • 3/4 c. Blueberries
  • 8 oz Shiitake Mushrooms, sliced
  • 3 tbsp Lemon Olive Oil
  • 1 tbsp Soy Sauce
  • ¼ c. Lemon Juice
  • Salt and Pepper to taste

Directions: 

  • Preheat oven to 350 degrees. Toss the sliced Radish, Garlic, white parts of Spring Onion and Mushrooms in a bowl
    with a splash of Olive Oil, Salt and Pepper. Roast for 10-12 minutes on a sheet pan. Set aside to cool.
  • Tear the Kale by hand and place in a bowl. Add 1 tsp of salt and massage the Kale
    with your hands until it breaks down and becomes soft. Next add the green part of Spring Onion, Blueberries and
    diced Apples along with the roasted ingredients. Toss well to incorporate all the ingredients.
  • Whisk together the Lemon Juice, Olive Oil, Soy Sauce and a little more salt and pepper. Pour over entire salad and mix well. Serve and enjoy!
