Herb Roasted Sweet Potatoes

These herb-infused roasted sweet potatoes are tender, caramelized, and bursting with savory flavors, making them the perfect side dish or light meal.

Ingredients:

  • 2-3 Medium Sweet Potatoes, cut into 1-inch chunks
  • 2-3 tbsp Fresh Garlic Chives, chopped (or any fresh herbs you prefer like rosemary, thyme, or parsley)
  • 2 tbsp Olive Oil
  • Salt and freshly ground Black Pepper, to taste

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, toss the sweet potato chunks with olive oil, garlic chives (or your chosen herbs), salt, and pepper until evenly coated.
  3. Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes, flipping halfway through, until the potatoes are tender and slightly caramelized.
  4. Remove from the oven and serve hot.
