Grilled Veggie Skewers

Ingredients:

  • Squash
  • Zucchini
  • Grape tomatoes
  • Red radishes
  • Gold beets
  • Red spring onion
  • Olive oil
  • Salt and pepper

Directions:

  1. Preheat your grill to medium-high heat.
  2. Wash and chop the vegetables into bite-sized pieces.
  3. Thread the vegetables onto skewers, alternating between varieties.
  4. Brush the skewers with olive oil and sprinkle with salt and pepper.
  5. Grill the skewers for 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.
  6. Serve hot off the grill.
