Garlic Roasted Red Radishes

This garlicy side dish makes a simple but delicious addition to any meal!

Ingredients:

  • 1 lb fresh Red Radishes, ends trimmed and halved
  • 1 tbsp Butter or Ghee, melted
  • 1/2 tsp Sea Salt
  • pinch Black Pepper
  • 2-3 cloves Garlic, minced
  • 1/4 tsp Parsley, fresh or dried

 

Directions: 

  • Preheat your oven to 425 degrees.
  • Mix together all the ingredients except the garlic until the radishes are coated evenly in butter and seasoning.
  • Spread the radishes evenly on a baking sheet lined with parchment paper and bake for 20 min.
  • After the first 10 min, add the garlic and toss the radishes around to spread garlic evenly. (Adding the garlic at this time prevents it from burning.) Return to oven and bake for the remaining 10 min, or until fork tender.
  • Garnish with parsley and serve immediately with ranch dressing if desired.
