Fruit Salad with Arugula

Get ready to boost your nutrition with this delightful fruit salad recipe – a colorful medley of local, fresh fruits that will leave you feeling refreshed and revitalized!


  • 4 large nectarines, 3 sliced 1/4 inch thick and 1 coarsely chopped
  • 1 pint blackberries
  • 1 shallot, minced
  • 3 tbsp sherry vinegar
  • 1/4 c. plus 2 tbsp extra-virgin olive oil
  • 4 bunches of arugula
  • Salt & pepper to taste
  • 1/4 c. feta (optional)
  • 1 c. blanched almonds or walnuts (optional)


  1. Preheat the oven to 375 degrees. Toast almonds (or walnuts) in an oven safe dish for 5-7 minutes.
  2. To make the vinaigrette, in a small bowl add the shallot, vinegar. Whisk in the olive oil until mixed together. Season with salt and pepper.
  3. Put the sliced nectarines and the blackberries in a large bowl. Add one-third of the vinaigrette. Then add the arugula and toss gently with the remaining vinaigrette. Optional: garnish with the almonds or walnuts and serve immediately.
