Butternut Squash, Ginger & Apple Soup

Ingredients: 

  • 2 Butternut Squash, peeled cut into large chunks
  • 2 bunches of scallions, chopped
  • 4 Granny Smith Apples, quartered and peeled
  • Fresh ginger, peeled and sliced
  • 8 c. of the stock of your choice
  • 4 tbsp olive oil
  • Salt and Pepper to taste
  • A little butter at the end

Directions: 

  1. In a heavy bottomed pan over high heat add the olive oil and then the scallions and ginger. Cook for 3-4 minutes or until fragrant.
  2. Reduce the heat to low and add the squash and apples, mix everything together and add salt and pepper to taste. Cover and let simmer for 20-25 minutes, stirring frequently.
  3. Add the stock and bring the mixture to a boil for about 5 minutes. Remove from the heat and blend with an immersion blender until everything is smooth, then add 1 healthy pat of butter and gently stir around until the butter has melted.
  4. Serve with sour cream and enjoy!
