Asparagus & Spring Vegetable Stir-Fry

Ingredients:

  • Asparagus, chopped
  • Red radish
  • Red spring onion
  • Mixed squash
  • Garlic chives
  • Olive oil
  • Soy sauce (or tamari for gluten-free option)
  • Sesame oil
  • Cooked rice or noodles
  • Optional: Sliced chicken, tofu, or shrimp for protein

 

Directions:

  1. Wash and trim the asparagus spears, slice the red radishes, and chop the red spring onions, mixed squash, and garlic chives.
  2. Heat a tablespoon of olive oil in a large skillet or wok over medium-high heat.
  3. Add the sliced red radishes and chopped red spring onions to the skillet and stir-fry for 2-3 minutes until slightly softened.
  4. Add the chopped mixed squash and asparagus spears to the skillet and continue to stir-fry for another 3-4 minutes until the vegetables are crisp-tender.
